The interface is represented by the surface of a bubble formed in the volume of a locally superheated liquid. The boundary of a transition from a stable state of the evaporation surface to an unstable state has been determined on the basis of the Landau instability mechanism. A satisfactory agreement between the theory and experimental data is observed. %8 2002-06-01
