RÉSUMÉ

The mushroom proteins reviewed in this article comprise ribosome inactivating proteins, antifungal proteins, lectins, ubiquitin-like proteins, proteins with nucleolytic activity, proteases, and laccases. Most of these proteins play a role of defense against pathogens and foreign organisms.
