Gray (Maitake) is an edible mushroom with a good flavor, a crisp texture, and an excellent aroma. It goes well not only with both Asian and European dishes, but is also frequently used to treat spleen and stomach ailments, and to calm the mind in traditional Chinese medicine. Since the mid-1980s, the biological activities of G. frondosa have been evaluated in detail. Both basic research and clinical experience have shown that maitake possesses the ability to produce antitumor, immunological enhancement, and also has anti-HIV, antihypertension, antidiabetic, antihyperlipemia and antiobesity properties. %8 1999-12-01
