ABSTRACT

In the commercial market, octyl acetate has many applications, and it also possesses fruity flavor characteristics. This work shows the effect of several reaction parameters and the optimization study for the octyl acetate synthesis in the presence of biocatalyst fermase CALB 10000. The maximum conversion of 93.73% was obtained in 4h at optimum parameters, such as temperature 60°C, mole ratio of glacial acetic acid and n-octanol as 1:2, lipase loading 2% (w/v), molecular sieves 6% (w/v) of the total volume, and speed of agitation 200 rpm. The immobilized enzyme was reused eight times after recycle with an overall 30% loss from its initial activity without solvent condition. At different temperatures, the thermodynamic parameters were also determined, and the activation energy obtained was 20.42 kJ mol-1 with positive enthalpy change and negative entropy change. Thus, present experimental work strikes a significant inscription in the food industry, by synthesizing the natural flavor and green route product using biocatalysts without additional solvent.
