Carbohydrate composition and some technological properties of Baltic Rhodophyta

Baltic Rhodophyceae Furcellaria lumbricalis (Huds.) Lamour. and Phyllophora truncata (Pall.) Newroth et Taylor synthesize easy-hydrolizable polysaccharides of similar chemical composition. Monosaccharides of these algae are typical for the Rhodophyceae; the main sugars in them are galactose and glucose. Polysaccharides of F. lumbricalis and P. truncata are characterized by high content of 3.6-anhydrogalactose, but they differ significantly by sulphate group contents. It was found that high sulphate group contents and their specific disposition in carbohydrate chain (namely at C-2 residue of 3.6-anhydrogalactose) block the process of jelly formation in Phyllophora polysaccharide solutions. It was concluded that it was impossible to use P. truncata as an independent raw material to produce high-jelling stabilizers.
